Recommendations and tasting notes from Domaine de Cromey

As Thanksgiving fades and the Holidays begin to come into focus we turn our attention to food and wine celebrations for family and friends as we gather together at this special time of year.

At Cromey, the team meets to discuss the dishes we might pull together into a special dinner and the recipes for them, from traditional and modern inputs, often with some new twists. Then we do the wine pairings (and tastings) and we share these with you here in this blog.

We wrote about this special holiday dinner with French flair, including recipes, in a separate blog and added to it a special case of wine to pair with the meal.

Of course there are other wines that would pair well for this celebration. Wines that pair well with typical Holiday fare including a traditional turkey dinner. So we present a selection of these wines below, where you can pick and choose your own selection and quantity of wines, helping to make the Holiday celebration extra special.
 

Pre-Dinner drinks (Sparkling): 

Louis Picamelot Crémant de Bourgogne ‘Les Reipes’
Start the evening with this elegant Crémant, a sparkling wine crafted in the traditional method. Its fine bubbles, crisp acidity, and aromas of green apple, citrus, and brioche make it the perfect aperitif. The minerality and subtle toastiness set a lively tone for the meal to come.
 

Appetizers: 

Oudin Chablis 2022
This classic Chablis is ideal for accompanying delicate starters. Its zesty citrus, green apple, and saline minerality complement dishes like oysters, ceviche, or fresh goat cheese. The vibrant acidity keeps the palate refreshed.

Domaine Germain Saint-Romain Blanc 2021
A fresh and mineral-driven white, it complements shellfish, goat cheese, or vegetarian appetizers with its notes of white peach and flint.

Michel Arcelain Pommard 2012

Domaine Oudin Chablis Premier Cru "Vaucoupin" 2022
The minerality and crispness of this Chablis enhance soft cheeses like Brie or Camembert. 

Domaine Michel Rebourgeon Beaune 1er Cru "Les Chouacheux" 2019
Complex and structured, with layers of red and dark fruits, earthy undertones, and balanced tannins. It pairs beautifully with a range of robust cheeses, making it an ideal choice for elevating a cheese course. This wine embodies the elegance of Burgundy’s premier cru offerings 
 

Dessert:

Louis Picamelot Crémant de Bourgogne Rosé
If unavailable, the Louis Picamelot Crémant can reprise its role. Look for notes of red berries, soft creaminess, and a hint of residual sugar.
